Cooking with oils:
Best to use saturated as more stable. Sesame oil is also stable. Never allow an oil to smoke. Olive oil smokes at 325 degrees F. Roasting takes place at 400F.
Vegetarians are ok to cook with saturated fats as minimal present in their diet. Meat eaters however should use olive oil or sesame oil as there will already be high quantities of saturated fat in their bodies.
Try to use oils from where you live. Coconut oil more suited to the tropics and olive oil for Europe.
